Paiara is named after the straw-thatched stone houses where Puglian
wine-growers would shelter at the end of their working day. Excellent
value for money, Paiara labels are everyday wines to enjoy with every
moment of life.
The different grape varieties are harvested when they reach the ripening peak and they are transformed in wine separately. After taking the stalks off and pressing the grapes softly, maceration is carried out for 7-12 days in stainless steel tanks. During this phase, wine has completed fermentation at a temperature not higher than 27 °C. At the end of the year, the wine has also completed the malolactic fermentation. After reaching the definite blend, the wine stays in the tanks until it's bottled (about 15 months).
